We all love freshly baked cookies, especially when they are thick and chewy and very chocolately on the insides.  And this Mocha choc chip cookie recipe is one the best Ive tried.  It comes from one of my favourite baking blogs.

They are actually quite easy to make…the secret being not to overcook them.  These beauties should have a firm and almost crunchy outer layer and be slightly chewy and chocolatey on the insides.  Ive made these many times….and until today, they haven’t lasted long enough for me to photograph and blog about.


165g softened butter
3/4 cup brown sugar
1/4 cup white sugar
1 tablespoon finely ground coffee
1 egg
1 teaspoon vanilla extract
1 cup plain flour
1 cup bread flour
1 teaspoon baking soda
3/4 cup choc chips


  • Preheat oven to 180 degrees and line a cookie tray with baking paper
  • Beat butter and sugars in a mixture until light and fluffy
  • Add egg and vanilla and beat well
  • Combine  sifted flours and baking soda and add.  Mix on low speed until just combined
  • Stir in choc chips
  • Scoop large heaps of dough onto the tray and flatten lightly with your hands (an ice cream scoop helps  to get uniformity of cookie size)
  • Bake for 12 minutes until cookies are just golden
ready for the oven

Adding a spoon of ground coffee gives the cookies a slightly caramel flavour.  You can hardly taste the coffee,  but I have made this recipe without adding it with perfect results too.
